ALOO PARATHA (Whole wheat flatbread stuffed with potato stuffing)

If Rajma chawal is the king of lunches, aloo paratha is the king pf breakfasts! Definitely the best and most loved breakfasts (or brunch in some households 😉) of the north Indian families! Nothing like it on a lazy weekend!

Best served with butter, curd and pickle (if you like it). I personally love it just with butter. 🧈
My secret for a killer stuffing is generous amounts of dry masalas and a little bit of the north indian style homemade mango pickle’s masala! Trust me it enhances the taste a lot! Also try to make it with freshly kneaded soft dough! It will be easier.
REMEMBER: Do not store the mixture after adding salt and dry masalas for too long as the onions will release water and your filling will become very soggy and difficult to roll the parathas!
Potato stuffing recipe:
Boiled potatoes- 3 (mashed)
Onion-1/2 cup (chopped)
Fresh coriander- 1 tbsp ( finely chopped)
Salt- to taste
Red chilli powder- 1.5 tsp
Coriander powder- 2 tsp
Cumin powder- 2 tsp
Carom seeds- 2 tsp
Amchur (dry mango powder)- 1/2 tsp
Method:
Just mix everything up and voila, you are almost there! Now roll the whole wheat dough balls and fill the stuffing like dumplings and roll flat again! Roast with oil or ghee on tawa (flat pan) on both sides and enjoyy piping hot 😋 .
