Orange Carrot Breakfast Muffins



Mother’s day special! God couldn’t be everywhere, so he created mothers- the most selfless and caring beings

A mother’s pride are her children and a child’s strength is his mother. Every child loves his mom's food the most. Moms are the world's best chefs! That's because they cook with so much love for their family. Baking is one such way of pouring her love on her children. There's nothing more homely and wonderful than the aroma of freshly baked goods. Be it muffins or cookies, they fragrance just makes you feel at home, close to mom. I remember, when I was in college and go home for holidays or festivals, my friends at hostel used to wait eagerly for me to come back or maybe they waited for the box of homemade cake that my mom packed with me. Yeah, I am sure it was the cake. My roommate always asked me to get her a separate box so she doesn't have to share it with others!! Those are some very fond memories!


Today, I am a mom myself and my kid loves baked goods! He is a big fan of Cakes & cookies. But I try to avoid giving him so much sugar. So I try to bake cakes and muffins with natural sugar alternatives (like dates or honey) or with very less sugar. These muffins are good for so many reasons. First, they are made with whole wheat flour, second, they have carrots and orange in them for most of the sweetness and very less sugar. Added a little bit of crushed walnuts to make them extra yummy!



Ingredients:

Whole wheat flour- 1 cup

Baking powder- 1 tsp

Baking Soda- 1 tsp

Salt- a small pinch

Cinnamon- 1 tsp

Orange zest- 1.5 tsp

Yogurt- 1/3 cup

Milk- 1/3 cup (more to adjust consistency)

Oil- 1/3 cup

Vanilla extract- 1 tsp

Orange juice- 2 tbsp

Sugar- 1/3 cup

Honey- 1.5 tbsp

Carrot- 2 medium size (grated)

Walnuts- 1/4 cup (crushed)


Method:

1. Preheat oven to 350 degree F (180 degree C)

2. Mix dry ingredients together.

3. In a bowl, mix all the wet ingredients

4. Start adding and mixing dry ingredients mixture to wet mixture in batches

5. When wet and dry mixtures combine, add carrot and walnuts

6. Line a cupcake tray with cupcake liners and pour the batter 3/4th of the cup

7. Bake for 15-20 min or until poking a knife comes out clean.
