KESAR PISTA KULFI




Kulfi is not just a dessert, its like a pandora box of memories! My favorite memory of kulfi is from my college days when me and my friends used to enjoy kulfi from a dairy shop nearby. We never stopped at 1!


This was my first attempt at making kulfi and I am so happy with the outcome. Its creamy and dreamy! My son loved it so much!


Ingredient:

Milk- 1.5 litres

Milk powder- 4 tbsp

Sugar- 1/2 cup

White bread- 1 slice (sides removed)

Saffron- 8-10 strands

Pistachios- 1/2 cup (finely chopped)

Elaichi powdr- 1 tsp


Method:

🍨 Soak saffron in 2 tbsp warm milk.

🍨Heat a heavy bottom pan and boil milk. Keep scraping sides.

🍨Mix milk powder in half cup cold milk to make a slurry and mix it to the boiling milk. Keep scraping sides and stirring so that milk doesn’t stick to bottom.

🍨After 15 min add sugar and saffron. Keep reducing until it reaches 1/3rd its original quantity.

🍨Finely crush a white bread in mixer and add it. Bread helps to thicken milk faster.

🍨Add pistachios and cardamom powder when mixture reduces to half.

🍨Taste the mixture and add more sugar if you want. Take it off heat and let it cool.

🍨Pour it in your favorite containers and freeze for 5-6 hours.
