Instant Lemon Pickle (15 min)

Indian Pickles are something which generally take a lot of time to prepare and cook naturally. But for the instant generation, even pickles have to be instant. Its just a 15 min recipe!! Anyone can make it easily.
Last year, I ran out of my stock of mom made lemon pickle and didn’t have much time to do the whole process to make it myself. So I just randomly mentioned it to mom and then what, she suggested me to make a small batch of instant lemon pickle. Since then, I have made it quite often. Lemon pickle goes well with Khichadi, dal-rice or parathas. But I love it with all my meals!
I am amazed at how easy the recipe is and the taste is exactly the same as the regular lemon pickle. A bit sweet, a bit sour and a lot tangy, this pickle will surely make you go yummm.. Just make sure to use washed and well dried lemons and utensils. Any amount of moisture is not good for the pickle. So wipe and air dry everything (including knife and cooker) before starting.
Ingredients:
Lemons- 7-8 (each deseeded & cut in 8 pieces)
Sugar- 1/2 cup (more if you like it sweeter)
Lemon juice- 1 tbsp
Carom seeds- 2 tsp (hand crushed)
Pink salt- 1 tsp
Salt- 1 tsp
Hing (asafetida)- 1/4 tsp
Red chilli powder- 1 tsp
Cumin powder- 1 tsp
Garam masala powder- 1/2 tsp
Method:
1. Boil lemons with sugar and lemon juice in pressure cooker for 5-7 min on med-high heat.
2. Cool down a little then add all the spices and salt.
3. Refrigerate and consume within 2-3 weeks.
