WHITE SAUCE PASTA

There is nothing more romantic than Italian food. That's so true! Italian food is simple, clean and all about the right ingredients.
White sauce is generally confused with Alfredo sauce but there is a difference. Alfredo sauce does not have flour and milk like white sauce does.
The rich and creamy texture of the white sauce compliments the veggies so well! The way I like any Italian food is with lots of veggies in it (well I am a mom of a picky toddler! Have to add veggies in one form or another). In this recipe I have added broccoli (which tastes very good in this)🥦 spinach, bell pepper, corn, carrot and onion to it!
White sauce Ingredients:
Butter- 1 tbsp
All purpose flour- 2 tbsp
Milk- 2 cups (cold)
Cheddar cheese- 1/3 cup
Salt, oregano flakes, black pepper- to taste
Pasta Ingredients:
Pasta of your choice- 2.5 cups
Water- for boiling pasta
Oil- 2 tbsp
Salt- 2 tsp
Veggies:
Onion- 1/2 cup (sliced)
Bell pepper- 1/2 cup (sliced)
Carrot- 1/2 cup (Sliced)
Broccoli- 7-8 florets
Spinach- 1 cup (roughly chopped)
Corn kernels- 1/4 cup
Garlic- 2 tsp (finely chopped)
Olive Oil- 1 tbsp
Salt- to taste
Black pepper, oregano seasoning- 1.5 tsp
Mozzarella cheese- 1/2 cup (grated)
Method:
PAN-1
1. Saute all purpose flour in butter until it turns aromatic.
2. Add cold milk (very important to be cold to avoid lumps) to the mixture while whisking continuously.
3. When the sauce begins to thicken, add grated cheese and let it melt. Keep the flame on low and add salt, black pepper and oregano flakes. Turn off the heat and add to sauted vegetables along with boiled pasta!
SAUCEPAN:
1. Boil Water in a saucepan.
2. Add Pasta to boiling water
3. Add Salt and Oil.
4. Let it boil until it gets easily cut by a spoon.
5. Strain and keep aside. (DO NOT RINSE WITH COLD WATER)
PAN-2
1. Heat olive oil and add garlic and onion and cook for a minute
2. Add carrots, broccoli, corn, bell pepper, spinach and salt. Cover and cook for 3-4 minutes on medium flame.
3. Add bell pepper and oregano seasoning.
4. Stir everything and add white sauce and boiled pasta to it.
5. Let pasta get incorporated in sauce and then add grated mozzarella cheese and cover until cheese melts.
6. Pasta is ready! Enjoy with your choice of bread & wine!
