Broccoli Paratha (Flatbread with Broccoli stuffing)

When life throws Broccoli at you, just smile and make Parathas out of it!
Stuffed Parathas (flatbreads) are one of the most versatile varieties of flatbreads. A good hearty breakfast is definitely what parathas are! Do you know in Delhi, India, there is a place in Chandni Chowk which is famous for various stuffed Parathas. It is called ‘Parathe wali Gali’ (A street with paratha shops) and was established in 1870s. The varieties of parathas there are countless and the taste is lip-smacking!
Give a punjabi person a diet plan including broccoli and mixed veggies, it is bound to be converted into parathas! Because parathas are bae!
The great thing about broccoli parathas is that they taste very similar to Gobhi (cauliflower) parathas. So you can have the healthy broccoli without feeling like you are actually eating it. I don't like to cook paratha stuffings separately as I feel that reduces the flavor a little bit. I added good amount of ginger in this mixture and it just gives a very nice aromatic flavor to this healthy breakfast.
Ingredients:
Whole wheat kneaded flour- 2 cups
Broccoli- 8-10 florets - very finely chopped (I prefer to chop it in a food processor)
Ginger- 1 tbsp (very finely chopped)
Carom seeds- 2 tsp
Salt- to taste
Red chilli powder- 1 tsp
Coriander powder- 2 tsp
Cumin powder- 2 tsp
Green chilli- 1 (finely chopped)
Ghee/oil- for roasting parathas
Method: 1. Take a small ball-sized dough and roll it flat about 4-5 inch in diameter. 2. Apply ghee on top and stuff it with 1 tbsp of stuffing. 3. Make a round dumpling shape out of it and applying some dry flour, roll it flat 4. Roast on a flat cast iron skillet using ghee/oil from both sides until golden brown. 5. Serve hot with butter/curd or pickle!
This way of eating broccoli is definitely gonna be a hit in your family and the best thing is, even kids will love it!
Need to try this as my girls are fussy about eating broccoli. The parathas look so perfectly round.
