Banana Mango Icecream (Vegan friendy)



Summers and Icecreams are synonymous! For me as a kid, the best part of summers was Mango and Icecream! If only mangoes were available year round. Well, we can dream all we want, but the truth is mango is the king of fruits and it deserves to be. There are so many varieties of mangoes available in India, and all of them have their own unique flavor and oh so tasty.


We use mangoes in all possible ways. The more the mangoes, the merrier the summer vacation! As kids, when I used to visit my grandparents during summer break, my grandpa (who is very fond of mangoes too), used to bring a full crate for us and put them in a bucket of water (this process removes the heat from mangoes) and we used to have it with every meal. Such joyous times.

Now, my toddler loves mangoes too (no surprise!) and of course he loves ice creams! I try to avoid giving him too much sugar, so I prepared these amazing NO SUGAR vegan popsicles. These are so easy to prepare that my baby helped me do it. It was a fun activity that we both enjoyed. Just 2 ingredients and voila- creamy delicious ice-cream is ready!


Just remember to use FROZEN bananas (freeze atleast for 8 hrs) and CHILLED mangoes (chill in refrigerator for 4-5 hrs).


Ingredients:

Overripe Frozen banana- 2 (chopped)

Chilled ripe Mango- 2 (chopped)


Method:

1. In a blender, add bananas and mangoes and blend until smooth.

2. Pour in Popsicle molds and freeze at least for 5-6 hrs. (You can even have it as it is without freezing just after blending) It tastes amazing!

3. Remove from molds and enjoy!


Enjoy making this simple dessert with your kids and they would surely love to make it and relish it :)
